In just a few short weeks, moms and dads will fight back tears as they wave good-bye to college bound students.
One less thing to worry about is what they’ll eat. Chef Elle returns with two recipes: one to start the day, and another for late-night studying.
Give both a try. They’re delicious and as always, she’s kept it fresh and easy.
…to good food

3 T maple syrup
1/4 t nutmeg
1/4 t cinnamon
3/4 t sea salt
2 c oats
1 c apples (chopped)
1/4 c dates (chopped)
Tools
medium bowl, medium pot, measuring cups, measuring spoons, sharp knife, mixing spoon
Old School Translations
T = tablespoon; t = teaspoon; c = cup
Procedure
Add milk, maple syrup, nutmeg, cinnamon, sea salt and vanilla to a heavy, medium saucepan and allow to boil. Add oats and stir over medium-high heat until oats are softened and very thick, about 5 minutes.
Reduce heat to low. Stir in chopped apples and dates. Cook for an additional 5 minutes and remove from stove.
(yields approximately 4 servings) Store unused portion in the refrigerator to be consumed later. If planning ahead, simply double or triple the ingredients and store in the refrigerator or freezer in an airtight container.
