Chef Elle Green stopped by with some more viewer requests, and today it was all about graduation celebrations.

 

Dirty Fried Rice by Chef Elle

Ingredients

1/2 c Jasmine rice

4 T celery, diced

3 T green bell pepper, diced

3 scallion, green and white separated

1/3 c sweet potato strings

3 collard green leaves, shredded and fried

1 oz. soy sauce

5 T grapeseed oil

c=cup; T=tablespoon; t=teaspoon

 

Procedure

Cook rice according to the package instructions. Once done, transfer to a fine mesh strainer and rinse under cold water, completely draining any excess water. Store in an airtight container and refrigerate at least 8 hours.

For the scallions, separate the green and white, roughly chopping the green and thinly slicing the white into strips.

Set wok over medium-high heat and add 3 tablespoons of grapeseed oil. Once the oil is shimmering, add bell pepper and celery and cook 2 to 3 minutes. Increase heat to high and add chopped green onions, sweet potato strings and rice, stirring occasionally. Rice should be cooked until it’s slightly crispy, about 5 minutes. Pour in soy sauce and cook rice 3 to 5 minutes or until the liquid has evaporated.

To finish, stir in crispy collard greens and scallion strips.

Remove from heat and sprinkle with spiced peanuts and fried chicken livers.
