The holiday season is fast approaching, but now is not the time to get all frazzled.

Chef Elle is back to prove $40 is all you need to throw a cocktail party.

So go ahead and accept the challenge. After all, she’s kept it fresh and easy.

 

White Beans Fritters by Chef Elle

Ingredients

1 c Northern beans

3 c water

6 T all-purpose flour

2 beaten eggs

1 c medium ground oats

1/2 c oat flour

1 3/4 t sea salt

5 garlic cloves

5 thyme sprigs

2 1/2 c smoked turkey stock

1/2 t black pepper

barbecue spice

grapeseed oil

Procedure

Preheat oven to 300° F.

 

To prepare the Northern beans, place water in a container and add 1/2 teaspoon sea salt and agitate to dissolve. Add beans and cover with a lid. Set aside at least 8 hours.

 

Drain and rinse beans.

 

Set a Dutch oven over medium-high heat and add 3 tablespoons grapeseed oil. Once oil begins to shimmy, add garlic cloves. Once garlic has browned on both sides, add thyme and beans. Stir to coat well. Add stock and 3/4 teaspoon sea salt. Cover with a lid and allow beans to boil. Once boiling, transfer dish to the oven and allow beans to cook until tender, about an hour.

 

Allow Northern beans to cool and drain. Transfer beans, garlic and thyme to a food processor and pulse, leaving the beans slightly chunky.

 

Easy Solutions

To make this gluten-free, omit all-purpose flour and use oat flour instead.

 

 

The Great Pumpkin by Chef Elle

Ingredients

1/2 c pumpkin purée

3 1/2 oz. ginger liqueur

brown sugar syrup

2 oz. spiced rum

8 splashes cardamom bitter

splash of vanilla

sweet whipped cream

ice

 

 

Old-school Translations

c=cup; T=tablespoon; t=teaspoon

 

Procedure

Start with chilled ginger liqueur and spiced rum. Fill a cocktail shaker with ice and the first 5 ingredients. Shake well and pour into glasses, finishing with a dollop of sweetened whipped cream on top and enjoy.
