We’ve always heard breakfast is the most important meal of the day, and here on Live at 9 we take that very seriously.
Chef Chris Beavers stopped by with some recipes to get your day, and possibly your diet, started right.
Veggie Frittata with Asparagus and Quinoa
- 4 eggs
- ½ Heavy Whipping Cream
- 1 Tbs. Quinoa
- 2 Pinches of Cracked Black Pepper
- 1 Pinch of Kosher Salt
- 1 Tsp. Dry Ranch Seasoning
- ½ cup Asparagus Tips
Pre-heat oven to 350. In a mixing bowl, combine eggs and cream and whisk until well-blended. Add remaining ingredients and mix until all ingredients are evenly mixed. Pour mixture into a seasoned cast-iron skillet and bake for 15 minutes.
Omelet with Spinach, Broccoli, and Turkey
- 3 eggs
- 1 Tbs. Olive Oil
- ¼ cup Broccoli
- ½ cup Spinach
- ¼ cup Diced Turkey
- Grated Cheese (optional)
Separate 2 eggs and dispose of the yolks. Add one whole egg and two egg whites into a mixing bowl. Season with Cracked Black Pepper and Kosher Salt. Heat omelet pan to 325 (medium-heat). Pour olive oil into pan. Add broccoli, Turkey and Spinach into pan and let sear for 90 seconds, stirring occasionally. Add seasoned egg mixture. Allow omelet to cook on medium-heat until done. Add cheese, if desired. Fold omelet and serve.
Metabolism Boosting Smoothie – Including yogurt, blackberries, blueberries, raspberries, and kiwi
- ¼ cup Orange Juice
- 3 Tbs. Plain Vanilla Yogurt
- 2 Tbs. Honey
- ¼ cup Blackberries
- ¼ cup Blueberries
- ¼ cup Raspberries
- ¼ cup Kiwi
- 1 cup of ice
Combine all ingredient and blend until smooth.
Smoked Salmon with Chili Pepper Cream Cheese on a Whole Grain Bagel
- Whole Grain Bagel
- 1 Pouch of Smoked Salmon
- ½ cup Cream Cheese Spread (at room temperature)
- 2 Tsp. Roasted Chili Pepper
- ½ tsp. Lemon Zest
- The zest of one small orange
In a mixing bowl, combine cream cheese, lemon juice, orange zest and roasted chili pepper. Fold until mixed well. Toast bagel, if desired. Spread cream cheese mixture on bagel and top with Smoked Salmon.
