It’s impossible to have a favorite holiday snack. Whether you lean towards cookies or doughnuts, Chef Elle has you covered. She’s shared her mother’s chocolate chip cookie recipe and developed an alternative to the popular sufganiyot.

At the request of some of Live At 9 young viewers, she’s back with another and in the nick of time. They want a special treat for Santa, but after one bite, it’s bound to make even the Grinch change his ways.

So get in the kitchen with the children and whip up a batch or two. It requires little time and only a few ingredients. And as always, Chef Elle has kept it fresh, easy and delicious.

Bedtime Biscotti as prepared by Chef Elle

Ingredients

2 c all purpose flour, sifted
1/4 t sea salt
1 t baking powder
3 T Grand Marnier
1 T orange zest
1 1/4 pecans, chopped
2 eggs
1/2 c butter
1 c sugar
2 t vanilla

Tools

serrated knife, hand mixer, baking sheet, cooling rack, measuring cup, measuring spoons, parchment paper, airtight container, sifter, whisk

Old School Translations

T = tablespoon; t = teaspoon; c = cup

Procedure

Place butter and sugar in mixing bowl. Mix on medium speed until combined. Add eggs, one at a time, mixing between each egg. Add vanilla, liqueur and orange zest and mix until combined. Gradually add flour and mix on slow speed. Add nuts. Place dough in a container and top with lid. Refrigerate for at least an hour.

Preheat oven to 350°F. Start with a cool or room temperature baking sheet. Line with parchment paper. Divide dough into two equal parts. Place on parchment paper and shape into 7 inch logs. Bake 20 minutes or until lightly golden. Allow to completely cool. Using a serrated knife, slice into individual pieces.

Preheat oven to 350°F. Line cookies on cooling rack and place on baking sheet. Bake additional 15-20 minutes or until brown. Remove from oven and allow to cool. Store remaining Bedtime Biscotti in an airtight container. (yields 3 dozen) To accommodate a large crowd, simply double or triple ingredients.

Easy Solutions: Dip hands in cold water to easily form logs. Butter should be soft enough to retain shape after pinching. Anything else is too soft and will cause dough to spread considerably.
