Chef Elle puts her unique spin on a southern staple! It’s perfect for your Oscars viewing party this week!

Everybody Really Needs A Best Friend, especially when embarking on An Unexpected Journey. Mention Curfew to teenagers and they protest No. The stars will be on the red carpet in less than a week. Many will be throwing their own Oscars® celebration at home. So, whether you’re hosting A Royal Affair or something more casual, Chef Elle returns to share an easy recipe inspired by Beast of the Southern Wild.

Go ahead and give this recipe a try. And as always, Chef Elle has kept it fresh and easy.

‘Tub-Puppies as developed by Chef Elle

Ingredients

1 1/4 c corn flour
1 c corn meal
1 1/2 t sea salt
1 T baking powder
1 egg
1 1/4 c milk
2 1/2 t honey
1 c wild green onions
1/2 lb. crawfish, precooked
1/2 lb. shrimp, precooked
12 garlic cloves, roasted and mashed
5 c grapeseed oil

Tools

sharp knife, measuring cups (liquid and dry), measuring spoons, 2 small spoons, fork, 2 bowls, large pot, tongs, paper towels

T = tablespoon; t = teaspoon; c = cup

Procedure

Devein and rinse shrimp. Season shrimp and crawfish tail with Cajun seasoning. Sautee in grapeseed oil and a pat of butter until slightly pink. Cut into medium pieces and set aside.

In a large bowl, add dry ingredients and stir well. In a separate container mix egg, milk and honey, ensuring they are well incorporated. Combine liquid and dry ingredients. Add crawfish, shrimp, green onions and garlic.

Place oil in pot and heat to 350°F. Using two spoons, scoop batter with one and the other to gently release batter into hot oil. Allow hush puppies to cook until golden, approximately a minute. Immediately turn and repeat the previous step. Hush puppies float when they’re ready.

Remove with tongs and drain on paper towels. (yields 6 servings) To accommodate a larger crowd, simply double or triple the ingredients.
