Smoked Tuna Dip

6 oz fresh tuna- poached in oil and cooled (of course canned can be used)
1/2 cup celery chopped
1/3 cup scallions chopped
4 oz cream cheese
1/2 cup sour cream
1/2 cup mayonnaise
1 tsp black pepper
1 lemon juice
3 Tbs chopped parsley
1 tsp Tabasco
1/4 tsp liquid smoke

Soften the cream cheese and mix with the mayonnaise and sour cream, Tabasco, liquid smoke and lemon juice until smooth.

Add the celery and scallions and pepper, then flake the tuna apart and mix well.

Chill and serve with pita chips. Also makes a pretty excellent tuna melt!
