Irish stew recipe warms up the New Year

Ring in the New Year with a little luck of the Irish!  Celtic Crossing Irish Pub & Restaurant is hosting an 80’s and 90’s-themed party on New Year’s Eve to benefit the Humane Society of Memphis & Shelby County.  DJ Tree will kick off the party at 10 p.m. There will be party favors, a photo booth, balloon drop and more!  There’s a $15 cover charge, or you can reserve a Champagne Package for two for $60.  For more information, call (901) 212-6190.  Celtic Crossing is located at 903 S. Celtic Crossing’s Beef Stew

Ingredients:

1 pound stew meat

1/2 yellow onion, diced largely

1 carrot, peeled and diced largely

1 stalk celery, diced largely

1/2 pint Guinness

1/2 teaspoon kosher salt

1/4 teaspoon black pepper

1/4 teaspoon thyme

1/2 teaspoon granulated garlic

1 quart beef stock

1 Tablespoon Worcestershire sauce

2 Idaho potatoes, peeled and diced largely

2 Tablespoons olive oil

 

Method:

Step 1: Brown meat with olive oil, salt and pepper in pan large enough to hold at least two gallons.

Step 2: When meat is about medium rare and browned on all sides, add Guinness and simmer until liquid is reduced by a half.

Step 3: Add vegetables, garlic, thyme, potatoes and Worcestershire sauce, and cook for about ten minutes, stirring often.

Step 4: Add beef stock and cook until vegetables are tender.

Extra step: If you desire a thicker texture, add a small amount of cornstarch.
