Afro-Cuban Valentine’s Day Dinner shares classic Nigerian side dish

Here’s a way to add a little extra spice to your Valentine’s weekend. Nigerian Chef Hilda O is serving up Afro-Cuban food at a special dinner on South Main.

 

 

Coconut Rice and Kidney Beans, A Classic Nigerian Side Dish

 

Ingredients

Serves Six

2 cups long grain rice

1 ½ cups coconut milk

1 can red kidney beans

3 green onion

1 sprig of fresh Thyme

2 garlic cloves

2 cups water

salt & ground pepper

 

Drain & rinse beans. Put beans, coconut milk, rice, green onions, thyme, garlic, water, salt & pepper in a pot with a tight fitting lid.

Bring up to a boil, then reduce heat to low. Cook for 30-40 minutes, until all liquid is absorbed & rice is soft. Serve warm
