Bon Ton Café Blackened Catfish
Serves 2
Ingredients:
2 catfish filets
½ cup blackened seasoning
1 tablespoon butter or olive oil
Method:
Step 1: Season both sides of catfish with the blackened seasoning.
Step 2: Over medium high heat, warm a skillet to hot.
Step 3: Add the butter/olive oil and swirl to coat the bottom of the skillet.
Step 4: Place the catfish in the skillet and cook on one side for four minutes and turn when cooked halfway through.
Step 5: Cook for another four minutes on the other side.
Step 6: Remove from pan and serve immediately.
Bon Ton Café Remoulade Sauce
Makes about 2 1/2 cups
Ingredients:
2 cups mayonnaise
1 teaspoon minced fresh garlic
¼ cup Cajun seasoning
1 tablespoon paprika
1 teaspoon hot sauce
1 teaspoon freshly squeezed lemon juice
½ cup Creole mustard
Method:
Step 1: In a medium bowl, whisk together all the ingredients.
Step 2: Cover and refrigerate for two hours to allow the flavors to meld.
Step 3: Serve over blacked catfish and enjoy!
