Chef Elle makes dumplings

MEMHPIS, Tenn. — Southern hospitality is real, but those in the Mid-South are generous to a fault. And no matter the occasion, there’s always a sea of food, and you can count on leftovers.

Once you’ve grown tired of sandwiches, give Chef Elle’s recipe a try. After all, you only need leftovers, and she’s kept it fresh and easy.

 

Dump Dumplings by Chef Elle

Ingredients: (c=cup; T=tablespoon; t=teaspoon)

Procedure:

  1. Line a baking sheet with cotton kitchen towels.
  2. To form dumpling, place wrapper in the palm of your hand. Dip finger in water and gently wet the perimeter of the wrapper.
  3. Add a teaspoon of sweet potato and a few pieces of turkey in center of wrapper and fold in half. Press upward from filling to edge to remove excess air and seal the dumpling.
  4. Place dumpling on a cloth lined baking sheet. Repeat steps with remaining wrappers and filling.
  5. Add grapeseed oil to a large skillet and set over medium-high heat. Once oil is shimmering, add dumplings. After cooking 2 to 3 minutes, increase heat to high. Add 4 ounces water and cook until water dissipates.
  6. Transfer dumplings to a serving platter and enjoy. Yields 30 pieces.

Sister Eddie Mae and Miss Betty Sue really got carried away and even added leftover dressing to their Dump Dumplings.

Making the cranberry sauce is really easy. Simply add leftover cranberry relish to a medium pot and set over medium-low heat. Once it’s simmering, add 5 ounces white wine and 10 ounces turkey, chicken or ham chicken stock. After about 6 minutes, remove from heat and stir in cold butter. Drizzle over dumplings and enjoy.
