Chef Elle’s Elite Eight Dip
Since picks have been made and brackets are now complete, the only thing left to do is try this recipe. After all, Chef Elle has kept it fresh, easy and delicious!
Ingredients
2 lbs. medium onions, thinly sliced
4 fresh thyme sprigs
1 bay leaf
1/4 c grapeseed oil
1/2 c water
2 T beef demi-glace
4 roasted garlic cloves, crushed
1/3 c chives, snipped
2 oz. bourbon
2/3 c milk, warm
4 c Monterey Jack cheese, grated
1 1/4 c Gruyère cheese, grated
1/3 c parsley, finely chopped

Tools
grater, knife, measuring cups, measuring spoons, large skillet, large spoon, baking pan, parchment paper

Procedure
Heat the oil in a large, heavy skillet. Add onions, thyme, bay leaf and salt and cook over medium heat. Stir onions frequently until they begin to brown, approximately 8 minutes. Add water and cook until it evaporates and the onions are tender and caramelized.
Stir in bourbon and demi-glace and cook for an additional minute.
Add milk, roasted garlic, Monterey Jack and 3/4 cup Gruyère cheeses and stir until melted. Stir in parsley and chives. Season with sea salt and pepper to taste. Sprinkle remaining Gruyere over the top.
Place under broiler until cheese has completely melted and brown spots appear. *Best if served hot. (yields 8 servings) To accommodate a larger crowd, simply double or triple the ingredients.
Baguette Slices
3 T grapeseed or olive oil
1/8 t sea salt
Preheat oven to 375º F.
Line baking sheet with parchment paper. Arrange baguette slices. Using a pastry brush, lightly oil both sides of the bread. Place in the oven to bake. After 7 minutes, turn the croutons over and bake an additional 5 minutes.
