CHOCOLATE PANINI WITH ORANGE MARMALADE SAUCE

3 eggs, lightly beaten

¼ cup milk

2 semi-sweet or dark chocolate bars (4.5 to 5 ounces each)

8 slices of challah bread, egg bread, or firm French style bread, cut ½” thick

¾ cup orange marmalade

2 tablespoons orange liqueur (or orange juice)

Powdered sugar

In a flat bowl, whisk the milk into the eggs and set aside. Top four slices of bread with the chocolate bars, breaking the chocolate so there is no overhang. Top with remaining bread slices.

Preheat a panini grill. Dip the sandwiches into the milk/egg mixture and place on the grill. Close the lid and cook until the outside is golden and the chocolate is melted.

Meanwhile, in a small pan, warm the marmalade with the liqueur or orange juice. Whisk to combine. You want it just warm enough to melt the marmalade.

When the sandwiches are done, remove to a plate, drizzle with the sauce and sprinkle with the powdered sugar. Serves four.

NOTES:

1) If you want to be really cute you can use a cookie cutter to cut the bread into rounds before making the sandwiches.

2) If you don’t have a panini grill, use a heavy skillet and melt two tablespoons of butter in it. Cook over medium-high heat, turning once, until chocolate is melted and sandwich is golden brown.
