Here in the South, catfish is king.

But you can find ways to make this old favorite new again.

Flying Fish‘s Grilled Catfish with Vera Cruz Sauce

Ingredients (catfish)

7- to 9-ounce Catfish fillet

8 ounces white rice

6 ounces Borracho beans

1 ounce green onions, sliced

3 slices each of zucchini & squash

2 lemon wedges

​Salt and pepper, to taste​

 

Method (catfish):

Step 1: Place the catfish filet on the grill (or skillet) and season with salt and pepper.

Step 2: After one and a half minutes, turn catfish 90 degrees.

Step 3: After three minutes total, turn the fillet over and season other side.

Step 4: While catfish is cooking, place zucchini and squash slices on the grill (or in additional skillet) and season with lemon pepper seasoning. Cook until soft, and vegetables have grill marks but be careful not to burn.

Step 5: Place 8 ounces of rice on plate and top with 6 ounces of borracho beans.

Step 6: Garnish with chopped green onions.

Step 7: Remove catfish from grill (or skillet) once cooked to an internal temperature of 155 degrees, and place on plate with rice and beans.

Step 8: Alternate grilled zucchini and squash, and place on plate next to grilled catfish.

Step 9: Add two lemon slices to the plate, top with Vera Cruz sauce and eat it up!

 

Ingredients (sauce):

2 red bell peppers

2 green bell peppers

2 yellow bell peppers

2 poblano peppers

8 jalapeños

2 jumbo yellow onions

¼ cup chopped garlic

½ cup olive oil

2 quarts kitchen Chablis

46 ounces tomato juice

46 ounces V-8 juice

2 bunches cilantro

1 cup manzanilla stuffed olives

2 Tablespoons capers

¼ cup granulated sugar

½ cup white vinegar

¼ cup Kosher salt

2 Tablespoons crushed red pepper

.7 pound Old Bay seasoning

.3 pound cayenne pepper

 

Method (sauce):

Step 1: Chop all peppers into desired size.

Step 2: Pour olive oil into pot over medium heat.

Step 3: Add in all ingredients and stir regularly.

Step 4: Simmer until peppers and onions are soft, and sauce is reduced.

Step 5: Pour over grilled catfish and enjoy!
