Fruit Salad Dressing
½ cup honey
Juice of one lemon
Zest of one lemon
Combine all ingredients and stir with a whisk.
Raspberry Balsamic Vinaigrette
¼ cup olive oil
Balsamic vinegar to taste
1 10 oz jar of seedless raspberry jam
Combine all of the ingredients in a blender and process till smooth. Store in the refrigerator.
Peaches and Tomato Salad
For the marinade:
1/3 cup white balsamic vinegar
2 tablespoons brown sugar
2 tablespoons olive oil
Dash of salt
Mix this together and add approximately 4 nice-sized peaches, peeled and chopped. Put aside while you construct the rest of the salad.
Layer the salad in this order:
Sliced tomatoes
Peaches and marinade
Toasted pecans
Finely chopped fresh basil
Feta cheese
