They’re a Mid-South treasure.
Ripley tomatoes are world-famous for their deep flavor, and for 33 years now, the delicious red fruit has been celebrated with its own festival.
Susan Worlds, with the Lauderdale County Chamber of Commerce, was here with Tomato Farmer Crystal Barham to show us how to incorporate the delicious fruits into a summer recipe you are sure to enjoy.
Summertime Tomato, Onion and Cucumber Salad
- 5 medium plum tomatoes, halved lengthwise, seeded, and thinly sliced (can substitute a mixture of different tomatoes to give color such as cherry, roma, green and yellow tomatoes)
- ¼ red onion, peeled, halved lengthwise, and thinly sliced
- 1 large cucumber, halved lengthwise and thinly sliced
- A generous drizzle of extra –virgin olive oil, about 2 tablespoons
- 2 splashes of red wine vinegar
- Coarse salt and black pepper
Mix the tomatoes, onions, and cucumber with olive oil, red wine vinegar, salt and pepper.
Let stand for about 20 minutes.
Re-toss and serve.
Can be garnished with crumbled bacon with crusty bread for sopping up all the juices.
