In the heart of Binghampton, Caritas Village is giving children and adults alike, a place to bridge the gap to come together no matter their ethnic, racial or financial backgrounds.

Chef Eli Townsend is Caritas Village ‘s new Artist in Residence.

He stopped by with founder Onie Johns to talk about the impact Caritas Village is having on their community.

Roasted Potato Salad

Ingredients

4 large Idaho potatoes( small-medium diced)

1 bunch of green onions diced

1/4 cup of olive oil

1 teaspoon each:

Basil,Nutmeg,Hungarian Paprika,Garlic powder,Salt, Crushed Red Pepper, Parsley

1cup Sour Cream

I cup Mayo

1/4 cup of grated parmesan

 

Directions:

Wash and diced potatoes. Place in medium boil add olive oil and spices. Toss and place on cookie sheet. Bake for 40 minutes @ 400 degrees. Removed from oven and let cool. Then place back in medium bowl add Sour cream, mayo, Parmesan cheese and green onion. Blend throughly with hands or spoon. Add salt if needed. Chill for at least 30 minutes and serve. Save a few green onions for garnish.

Side note: Adding Crisp bacon is a great addition to this recipe.
