Will Renick, the new Head Chef at Celtic Crossing, stopped by to talk about the Taste of Cooper Young.

We were told Celtic Crossing is just one of at least a dozen restaurants taking part.

 

Horseradish Vinagrette

Makes 1.5 cups

 

½ c Red Wine Vinegar

1 cup olive oil

½ tbsp. prepared horseradish

½ tbsp. salt

¼ tbsp. black pepper

¼ tsp sugar

 

Mix and shake well

 

Candied Beets

Makes 1 quart

 

10 red beets, peeled

1 cup sugar

¾ c white vinegar

2 c water

1 tbsp salt

 

Simmer in sauce pan until there is very little liquid. Serve chilled.
