Sometimes getting dinner on the table is hard.

Angus Beef Sliders  

2 pounds ground angus beef

1 tablespoon adobo seasoning

½ teaspoon pepper

½ medium onion (grated)

3 tablespoons Worcestershire sauce

2 tablespoons bread crumbs

1 large egg

mixed baby greens

mini hamburger buns or dinner rolls

butter

pre-sliced provolone cheese (cut in quarters)

vegetable oil for frying

 

Procedure

Preheat oven to 200 degrees

Spread thin layers of butter on slider buns & toast on a hot griddle until golden brown; place toasted buns on an oven safe dish & place in the 200 degree oven until ready for use.  In a large bowl, mix ground beef, onions, bread crumbs, Worcestershire sauce, adobo, pepper & egg; combine well.  Spoon 3 tablespoonfuls of beef mixture & roll to a loose ball, then flatten without tearing (size should be as big as a regular sized hamburger patty.  The beef will shrink to slider size upon frying.   Pan fry one side until slightly crisp & dark brown, turn over & place provolone cheese on top of the hamburger while the other side is frying.  Assemble burgers by adding a spicy mayo, baby greens & other condiments of your choice. (Try red pepper mayo in this chapter)

Philly’s Fiesta Dip “Philly’s Fiesta Dip”

16 ounce salsa

4 cups cheese

16 ounce sour cream

31 ounce can refried beans

2 cups diced chicken (cooked) seasoned

with adobo seasoning

jalapeno’s

black olives

 

Procedure

Preheat oven to 400 degrees. In a 9×13 spread the refried bean on the bottom of the pan (the beans will act as your base.  Layer the sour cream, chicken and salsa.  Cover it completely with cheese.  Top with black olives and jalapenos.  Bake for 30 minutes at 400 degrees.  Before serving allow dip to cool for 5 minutes.  Serve with tortilla chips
