Try this Southern spin on a popular Middle Eastern recipe

BLACK-EYED PEA HUMMUS, LARDONS OF BACON, & FLO’S CHOW CHOW

 Ingredients:

2 cups cooked black-eyed peas

1 tablespoon chopped garlic

2 tablespoons Tahini (sesame paste)

Juice of 1 Lemon

¼ to ½ cup olive oil

hot sauce to taste

salt to taste

cumin to taste

4 to 8 slices of bread, toasted

2 cups diced think bacon, cooked until crispy (1# slab of bacon)

8 tablespoons Flo’s Chow Chow

 

Directions:

In a food processor, combine black-eyed peas, garlic, tahini, and lemon juice. Puree until smooth. With the machine running, slowly add the olive oil. Season with hot sauce, salt, and cumin to taste.

Makes: 4 to 8 slices
