An East Memphis favorite salad stop has a new name and a new concept.

It is called the Wild Beet Salad Company.

Owner Kelcie Hamm was here to show us how to make their new signature item, Beet Salsa.

Beet Salsa Recipe

Makes two cups – serves four.

 

1 1/2 cups roasted beets, diced

1/2 cup pineapple, diced

1/2 cup chopped cilantro

2 tbs olive oil

1 tbs white wine vinegar

salt and pepper to taste

 

Roasted Beets:

Remove the tops of 3 large beets. Cut beets in half. Drizzle them in olive oil and wrap in foil.

Bake at 350 degrees for 45 minutes or until you can easily cut. Remove outer skin. This should slide right off once roasted.
